  • 1 spaghetti squash, halved lengthwise and seeded
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1 1/2 cups chopped tomatoes
  • 3/4 cup crumbled feta cheese
  • 3 tablespoons sliced black olives
  • 2 tablespoons chopped fresh basil

Directions

  • Preheat the oven to 350°F (175°C). Lightly grease a baking sheet.
  • Place the squash halves cut-side down on the baking sheet and bake for about 30 minutes, or until a knife inserts with slight resistance. Let cool slightly.
  • Heat oil in a skillet over medium heat. Sauté the onion until tender, then add garlic and cook until fragrant. Stir in tomatoes and warm through.
  • Scoop the squash strands into a bowl.
