  • 360 g warm water
  • 10 g salt
  • 7 g instant or rapid yeast
  • 100 g sourdough discard (unfed starter)

Directions

  1. Combine flour, warm water, yeast, salt, and sourdough discard in a bowl. Mix until a shaggy dough forms.
  2. Cover and let rise 1–2 hours, or until doubled in size.
  3. Preheat oven to 220°C (430°F) with a Dutch oven inside.
  4. Turn dough onto floured parchment and gently shape into a round loaf. Score the top if desired.
