Ingredients
For the Filling:
- 8 ounces thick-sliced bacon
- 1 (10-ounce) package frozen chopped spinach, thawed
- 2 tablespoons olive oil
- 1 onion, finely diced
- 8 ounces fresh mushrooms, finely diced
- 2 cups finely diced smoked ham
- 1 (8-ounce) container sour cream
- Salt and ground black pepper, to taste
For the Crust and Topping:
- 2 (9-inch) unbaked pie crusts
- 8 ounces Monterey Jack cheese, shredded
- 8 ounces Cheddar cheese, shredded
- 4 ounces Parmesan cheese, grated
For the Egg Mixture:
- 8 eggs
- 1 ½ cups half-and-half
- 1 tablespoon dried parsley
- Salt and ground black pepper, to taste
Directions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the bacon over medium-high heat until crisp. Drain on paper towels, crumble, and set aside.
- Prepare the spinach according to package instructions, then cool and squeeze out any excess moisture.
- Heat olive oil in the same skillet and sauté the onion until soft and translucent.
- Add mushrooms and cook until tender, about 2 minutes. Stir in the ham and cooked bacon, then remove from heat.
- In a separate bowl, mix sour cream with the spinach and season lightly with salt and pepper.
- Divide the spinach mixture evenly between the two pie crusts, then top each with the bacon and ham mixture.
- Combine the three cheeses (Monterey Jack, Cheddar, Parmesan) and sprinkle evenly over the top.
- In another bowl, whisk together eggs, half-and-half, parsley, salt, and pepper.
- Pour the egg mixture evenly into both crusts.
- Place the quiches on a baking sheet and bake for about 40 minutes, or until the tops are puffed and golden brown.
