Ingredients
- 1 (4 pound) bone-in prime rib roast, room temperature
- 1/4 cup unsalted butter, softened
- 1 tablespoon freshly ground black pepper
- 1 teaspoon herbes de Provence
- Kosher salt, to taste
Directions
- Place the prime rib roast on a plate and bring it to room temperature for 2–4 hours (6 hours is ideal).
- Preheat oven to 500°F (260°C).
- In a small bowl, combine softened butter, black pepper, and herbes de Provence. Spread evenly over the roast. Season generously with kosher salt.
- Roast the 4-pound prime rib in the preheated oven for 20 minutes. For larger or smaller roasts, multiply the exact weight (in pounds) by 5 minutes to calculate roasting time.
- Turn off the oven and do not open the door. Leave the roast inside for 2 hours, allowing the trapped heat to finish cooking.
