1 cup cake flour
3/4 cup caster sugar
3/4 teaspoon baking powder
1/4 teaspoon salt
13 tablespoons unsalted butter, softened
3 large eggs, room temperature
3 tablespoons milk, room temperature
1 1/2 teaspoons vanilla extract

Directions

  • Preheat the oven to 180°C / 350°F. Grease and flour a loaf pan.
  • In a bowl, whisk together flour, sugar, baking powder, and salt.
  • In another bowl, lightly whisk eggs, milk, and vanilla extract.
  • Add butter and half of the egg mixture to the dry ingredients and beat until combined. Increase speed and beat for 1 minute.
  • Add the remaining egg mixture in two parts, beating briefly after each addition.
  • Transfer the batter to the prepared pan and smooth the top.
  • Bake for 50 to 55 minutes until a skewer inserted in the center comes out clean.
  • Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
