Ingredients
- ¼ cup butter
- 1 large onion, chopped
- 6 potatoes, peeled and diced
- 2 carrots, diced
- 3 cups water
- 2 tablespoons chicken bouillon powder (use vegetable bouillon for a vegetarian version)
- Ground black pepper to taste
- 3 tablespoons all-purpose flour
- 3 cups milk
- 1 tablespoon dried parsley
- ¼ teaspoon dried thyme
Directions
- Melt butter in a saucepan over medium heat. Add chopped onion and sauté until soft and translucent, about 5 minutes.
- In a separate large pot, add diced potatoes, carrots, water, and chicken bouillon. Bring to a boil, then reduce heat and simmer until vegetables are tender (about 10 minutes). Do not overcook.
- Stir flour into the cooked onions to create a smooth paste. Cook for 2 minutes, stirring constantly.
