Ingredients

  • ¼ cup butter
  • 1 large onion, chopped
  • 6 potatoes, peeled and diced
  • 2 carrots, diced
  • 3 cups water
  • 2 tablespoons chicken bouillon powder (use vegetable bouillon for a vegetarian version)
  • Ground black pepper to taste
  • 3 tablespoons all-purpose flour
  • 3 cups milk
  • 1 tablespoon dried parsley
  • ¼ teaspoon dried thyme

Directions

  • Melt butter in a saucepan over medium heat. Add chopped onion and sauté until soft and translucent, about 5 minutes.
  • In a separate large pot, add diced potatoes, carrots, water, and chicken bouillon. Bring to a boil, then reduce heat and simmer until vegetables are tender (about 10 minutes). Do not overcook.
  • Stir flour into the cooked onions to create a smooth paste. Cook for 2 minutes, stirring constantly.
  • Gradually add milk, whisking to avoid lumps. Cook over low heat, stirring continuously until the mixture thickens slightly and is warmed through.
