Ingredients
- 6 medium potatoes
- ½ cup white sugar
- 2 large eggs, beaten
- 1 teaspoon cornstarch
- Salt, to taste
- 1 (5-ounce) can evaporated milk
- ½ cup vinegar
- 1 teaspoon prepared yellow mustard
- ¼ cup butter
- 1 cup mayonnaise
- 6 large hard-cooked eggs, diced
- 1 small onion, finely chopped
- 1 cup celery, chopped
- 1 teaspoon salt
Directions
- Place potatoes in a large pot and cover with salted water. Bring to a boil, then reduce heat and simmer until tender (about 20 minutes). Drain and set aside to cool.
- In a saucepan, whisk together sugar, beaten eggs, and cornstarch. Season lightly with salt.
- Add milk, vinegar, and mustard to the mixture. Cook over medium heat, stirring constantly, until it thickens (around 10 minutes). Remove from heat, stir in butter, and let the dressing cool in the refrigerator.
- Once the dressing has cooled, stir in mayonnaise until smooth and creamy.
- Peel and dice the cooled potatoes, then transfer them to a large bowl. Add the diced hard-boiled eggs, chopped onion, celery, and 1 teaspoon salt.
- Gently fold the dressing into the potato mixture until all ingredients are evenly coated.
- Cover and chill for at least 3 hours (or overnight) before serving for best flavor.
