Ingredients

  • 2 pork tenderloins (about 1 pound each)
  • 2 tablespoons brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ¼ teaspoon pepper (or to taste)
  • ¼ cup butter, cut into small pats
  • Chopped parsley (optional, for garnish)

Directions

  • Preheat the oven to 400°F (200°C) and position the rack in the middle.
  • Trim excess fat and silver skin from each pork tenderloin. Pat dry with a paper towel.
  • In a small bowl, mix brown sugar, smoked paprika, garlic powder, onion powder, chili powder, Italian seasoning, salt, and pepper to create the seasoning rub.
  • Coat the pork tenderloins evenly with the rub and place them in a 9×13-inch baking dish.
  • Arrange butter pats on top of the pork tenderloins.
  • Bake uncovered for about 25 minutes or until the internal temperature reaches 145°F (63°C).
  • Let the pork rest for 5–10 minutes before slicing to retain juices.
  • Slice into medallions, pour the pan juices over the top, and garnish with parsley if desired.
