Ingredients
- 1 (.25 ounce) package active dry yeast
- 2 teaspoons granulated sugar
- 3/4 cup warm water (110°F / 45°C)
- 2 cups bread flour, plus more as needed
- 1 teaspoon kosher salt
- 3 tablespoons extra-virgin olive oil, divided
Directions
- In a small bowl, combine yeast, sugar, and warm water. Let stand for 5 minutes until foamy.
- In the bowl of a stand mixer, stir together bread flour and salt. Add yeast mixture and 2 tablespoons olive oil.
- Beat with a dough hook on medium speed until dough is soft and slightly tacky, about 8 minutes, adding up to 3 tablespoons more flour if needed, one tablespoon at a time.
- Cover the dough and let it rise at room temperature until doubled in volume, about 1–2 hours, or refrigerate overnight for slower rise.
- Preheat oven to 475°F (245°C) with oven rack in the lower third.
- Turn dough onto a lightly floured surface, shape into a round, and roll into a thin crust. Place on a parchment-lined baking sheet or pizza pan.
- Top with pizza sauce and desired toppings. Brush the edges with remaining 1 tablespoon olive oil.
