- ¼ cup boiling water
- 3 tablespoons white sugar
- 1 teaspoon ground cinnamon
Directions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine sliced peaches, ¼ cup white sugar, ¼ cup brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Mix until the peaches are evenly coated.
- Pour the peach mixture into a 2-quart baking dish and bake for 10 minutes.
- In a separate bowl, mix flour, ¼ cup white sugar, ¼ cup brown sugar, baking powder, and salt.
- Blend in butter with your fingertips or a pastry blender until the mixture resembles coarse crumbs.
- Stir in boiling water until just combined to form a thick batter.
- Remove peaches from the oven and drop spoonfuls of batter evenly over the hot fruit.
- In a small bowl, mix 3 tablespoons sugar and 1 teaspoon cinnamon, then sprinkle over the cobbler topping.
