  • 1 tbsp white sugar
  • ¼ tsp salt
  • 1 ¼ cups milk (or any non-dairy milk alternative)
  • 1 egg (or ¼ cup mashed banana if making egg-free)
  • 3 tbsp melted butter (or oil for dairy-free)
  • ½ tsp vanilla extract (optional, for extra flavor)

Directions / How to Cook

  • In a large mixing bowl, sift together flour, baking powder, sugar, and salt.
  • Make a small well in the center and add milk, egg, and melted butter.
  • Whisk gently until the batter is smooth and lump-free do not overmix.
  • Heat a lightly oiled non-stick pan or griddle over medium heat.
  • Pour about ¼ cup of batter per pancake onto the hot surface.
  • Cook for 2–3 minutes or until bubbles appear on the top and the edges start to dry.
  • Flip carefully and cook for another 1–2 minutes until golden brown on both sides.
  • Serve warm with maple syrup, butter, or fresh fruit.
