Ingredients
- 2 liters vegetable or ham stock
- 150g red lentils
- 6 carrots, finely chopped
- 2 medium leeks, sliced (about 300g)
- Small handful of chopped parsley (for serving)
Instructions
- Heat the stock in a large pot and add the red lentils.
- Bring to a boil and let lentils soften for a few minutes.
- Add chopped carrots and sliced leeks. Season lightly (skip salt if using ham stock).
- Bring to a boil again, then reduce heat. Cover and simmer for 45 minutes to 1 hour, until lentils break down and soup thickens.
