For the Fruit Salad
- 2 cups fresh pineapple, cubed
- 2 cups strawberries, hulled and sliced
- 3 kiwi fruit, peeled and sliced
- 3 bananas, sliced
- 2 oranges, peeled and sectioned
- 1 cup seedless grapes
- 2 cups blueberries
Directions
- Wash, peel, and prepare all fruits as needed, cutting them into bite-sized pieces for easy serving.
- In a saucepan over medium-high heat, combine the orange juice, lemon juice, brown sugar, orange zest, and lemon zest.
- Bring the mixture to a gentle boil, then reduce the heat and simmer for about 5 minutes until slightly thickened.
- Remove from heat, stir in the vanilla extract, and allow the citrus sauce to cool completely.
- Place the pineapple, strawberries, kiwi, bananas, oranges, grapes, and blueberries in a large mixing bowl.
- Pour the cooled citrus sauce over the fruit and gently toss until evenly coated.
- Cover and refrigerate for 3–4 hours before serving to allow the flavors to blend and the fruit to chill.
