French Onion Soup Recipe
This classic French onion soup recipe is warm, comforting, and full of deep, rich flavors. Caramelized onions simmer in a savory broth, then are topped with toasted bread and melted cheese for a restaurant-quality experience right at home.

Ingredients
- ½ cup unsalted butter
- 2 tablespoons olive oil
- 4 cups sliced onions
- 5 cups beef broth
- 2 tablespoons dry sherry
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 4 slices French bread
- 4 slices provolone cheese
- 2 slices Swiss cheese, diced
- ¼ cup grated Parmesan cheese
Directions
- In a large stock pot, melt butter with olive oil over medium heat.
- Add the sliced onions and cook slowly, stirring often, until tender and translucent — avoid browning.
- Stir in the beef broth, sherry, thyme, salt, and pepper. Simmer uncovered for about 30 minutes to blend the flavors.
- While the soup simmers, preheat your oven’s broiler.
- Ladle the hot soup into oven-safe bowls. Place a slice of French bread on top of each serving.
- Layer with provolone cheese, diced Swiss, and Parmesan on top of the bread.
- Place the bowls on a baking sheet and broil for 2–3 minutes, or until the cheese melts and turns golden brown.
- Carefully remove from the oven and serve hot.
