Ingredients

  • ½ cup unsalted butter
  • 2 tablespoons olive oil
  • 4 cups sliced onions
  • 5 cups beef broth
  • 2 tablespoons dry sherry
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 4 slices French bread
  • 4 slices provolone cheese
  • 2 slices Swiss cheese, diced
  • ¼ cup grated Parmesan cheese

Directions

  • In a large stock pot, melt butter with olive oil over medium heat.
  • Add the sliced onions and cook slowly, stirring often, until tender and translucent — avoid browning.
  • Stir in the beef broth, sherry, thyme, salt, and pepper. Simmer uncovered for about 30 minutes to blend the flavors.
  • While the soup simmers, preheat your oven’s broiler.
  • Ladle the hot soup into oven-safe bowls. Place a slice of French bread on top of each serving.
  • Layer with provolone cheese, diced Swiss, and Parmesan on top of the bread.
  • Place the bowls on a baking sheet and broil for 2–3 minutes, or until the cheese melts and turns golden brown.
  • Carefully remove from the oven and serve hot.
