Ingredients

  • 1 cup white sugar
  • 3 large eggs
  • 1 (14 oz) can sweetened condensed milk
  • 1 (12 fl oz) can evaporated milk
  • 1 tablespoon vanilla extract

Directions

  • Preheat the oven to 350°F (175°C).
  • Make the caramel by placing the sugar in a medium saucepan over medium-low heat. Cook, stirring gently, until the sugar melts completely and turns a deep golden color. Immediately pour the hot caramel into a deep 9-inch round baking dish, carefully tilting the dish to evenly coat the bottom. Set aside.
  • Prepare the custard by beating the eggs in a large bowl until smooth. Add the condensed milk, evaporated milk, and vanilla extract, then whisk until fully combined and silky.
  • Assemble the flan by slowly pouring the custard mixture over the caramel layer in the baking dish.
  • Create a water bath by placing the flan dish into a large roasting pan. Carefully pour hot water into the pan until it reaches about 1 inch up the sides of the flan dish.
  • Bake uncovered for about 55–60 minutes, or until the flan is set around the edges with a slight jiggle in the center.
  • Cool and chill by removing the dish from the water bath and allowing it to cool to room temperature. Cover with plastic wrap and refrigerate for at least 3 hours to fully set.
  • Unmold and serve by running a knife gently around the edges, then inverting the flan onto a rimmed serving plate, allowing the caramel sauce to flow over the top.
