Ingredients
Nonstick cooking spray
5 small baby potatoes, thinly sliced
¼ stick butter, divided
10 large eggs
1 small yellow bell pepper, finely chopped
1 small tomato, finely chopped
½ cup fresh spinach, chopped
¼ cup chopped ham (optional)
¼ cup chopped white onion
1 slice mozzarella cheese, cut into 12 small cubes

Directions
Preheat the oven to 350°F (175°C) and generously spray a 12-cup muffin tin with nonstick cooking spray.
