Ingredients
2 cups heavy cream
1 vanilla pod or 1 teaspoon vanilla bean paste or vanilla extract
5 egg yolks
1/4 cup caster sugar (superfine sugar)
2 teaspoons caster sugar (for caramel topping)
Directions
Split the vanilla pod lengthwise and scrape out the seeds. Add the seeds, pod, and cream to a saucepan and simmer gently over low heat for about 10 minutes. Remove from heat and let the cream infuse for 1 hour, then discard the pod and skim any skin from the surface. Whisk the egg yolks and sugar until just combined, then slowly stir in the warm cream without overmixing. Pour the custard into ramekins and place them in a baking dish. Fill the dish with hot water until it reaches halfway up the sides of the ramekins. Bake until the custard is set but still slightly wobbly in the center. Chill thoroughly, then sprinkle sugar evenly on top and caramelize using a torch or a hot grill until golden and crisp.
