Ingredients
- 3½ ounces dark chocolate (about 62% cacao recommended)
- 1 tablespoon unsalted butter
- 2 large egg yolks
- 1 tablespoon white sugar
- ¼ cup water
- 1 small pinch of salt
- ½ cup chilled heavy whipping cream
Directions
- Finely chop the dark chocolate and set it aside with the butter so it’s ready to melt smoothly.
- In a heatproof metal bowl, whisk together the egg yolks, sugar, water, and salt until well combined.
- Place the bowl over medium-low heat and whisk constantly until the mixture thickens, becomes foamy, and feels hot to the touch.
- Remove the bowl from the heat and immediately add the chopped chocolate and butter. Whisk until everything is completely melted and the mixture is smooth and glossy.
- Allow the chocolate mixture to cool slightly, whisking occasionally, until it reaches room temperature.
- In a separate bowl, whip the chilled heavy cream until medium-stiff peaks form. The cream should hold its shape but remain soft.
- Gently fold about one-third of the chocolate mixture into the whipped cream to loosen it.
- Carefully fold in the remaining chocolate mixture, using slow, gentle motions to preserve the airy texture.
- Spoon the mousse into individual serving dishes, cover, and refrigerate until fully set.
