Ingredients

4 Beef Cube Steaks (About ½ Pound Each)
2 ¼ Cups All-Purpose Flour, Divided
2 Teaspoons Baking Powder
1 Teaspoon Baking Soda
1 Teaspoon Black Pepper
¾ Teaspoon Salt
1 ½ Cups Buttermilk
1 Tablespoon Hot Pepper Sauce
1 Large Egg
2 Cloves Garlic, Minced
3 Cups Vegetable Oil Or Shortening For Frying
4 Cups Milk (For Gravy)
Salt And Black Pepper To Taste

Directions

  • Place each cube steak between plastic wrap and gently pound until about ¼ inch thick. This helps tenderize the meat and ensures even cooking.
  • Add 2 cups of flour to a shallow bowl. In another bowl mix baking powder, baking soda, black pepper, and salt. Add buttermilk, hot pepper sauce, egg, and minced garlic, then whisk until smooth.
  • Heat oil in a deep skillet or cast iron pan to about 325°F (165°C).
  • Dredge each steak in flour, then dip it into the buttermilk mixture, allowing the excess to drip off. Coat the steak again in flour, pressing lightly so the coating sticks well.

  • Fry the steaks in hot oil for about 3 to 5 minutes per side until golden brown and crispy. Remove and place on paper towels to drain excess oil.
