Ingredients
For the Crust:
- 1 ½ cups graham cracker crumbs
- ¼ cup finely ground walnuts
- 1 tablespoon cinnamon sugar
- ½ cup butter, melted
For the Filling:
- 3 (8-ounce) packages cream cheese, softened
- ¾ cup white sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 3 large eggs, slightly beaten
Directions
- Preheat the oven to 375°F (190°C).
- In a medium bowl, combine graham cracker crumbs, walnuts, and cinnamon sugar. Stir in melted butter and mix until evenly combined.
- Press the mixture firmly into the bottom and about 1–2 inches up the sides of a 9-inch springform pan. Place the crust in the freezer for about 10 minutes to set.
- In a large bowl, beat the cream cheese, sugar, and vanilla extract together until creamy and smooth.
- Gradually add the heavy whipping cream on low speed, mixing until the batter is silky.
- Add the beaten eggs one at a time, blending gently after each addition until fully incorporated.
- Pour the filling into the prepared crust and smooth the top with a spatula.
- Bake for 35–45 minutes, or until the center is almost set when gently shaken.
- Let the cheesecake cool on a wire rack for 15 minutes. Run a butter knife around the edges to loosen it from the pan.
- Allow it to cool to room temperature, then refrigerate for at least 4 hours or overnight before serving.
