Ingredients

  • 1 pound jumbo shrimp, peeled and deveined
  • Juice of 5 large lemons (or enough to fully cover shrimp)
  • 2 white onions, finely chopped
  • 1 large tomato, seeded and chopped
  • 1 cucumber, peeled and finely chopped
  • 1 bunch radishes, finely diced
  • 2 cloves fresh garlic, minced
  • 3 fresh jalapeño peppers, seeded and minced
  • ¼ cup chopped fresh cilantro
  • Tomato & clam juice cocktail (as needed)
  • Tortilla chips (optional, for serving)

Directions

  1. Place shrimp in a bowl. Chop coarsely or leave whole based on preference.
  2. Add lemon juice until shrimp are fully submerged. Cover and refrigerate for 30 minutes, or until opaque and slightly firm.
  3. Stir in onions, tomato, cucumber, radishes, and garlic.
  4. Add jalapeño and cilantro gradually, adjusting spice and flavor to your liking.
  5. Mix in tomato and clam juice cocktail until the ceviche reaches your desired consistency.
  6. Cover and refrigerate for 1 more hour.
  7. Serve chilled with tortilla chips.
