Ingredients

- 1 can (28 oz) crushed tomatoes
- 1½ pounds ground beef
- 4 oz mushrooms, sliced
- 12 oz egg noodles
- 1½ cups frozen corn, thawed
- 1 can (15 oz) black olives, chopped
- 2 cups cheddar cheese, grated
Directions
- Preheat the oven to 350°F (175°C) and lightly grease a large casserole dish.
- Bring a large pot of water to a boil, add 1 tablespoon salt, and cook the egg noodles until just tender. Drain and set aside.
- Heat 1 tablespoon olive oil in a pan, sauté onion and bell pepper until soft, then add garlic and cook briefly until fragrant.
- Stir in crushed tomatoes, simmer for 10 minutes, then remove from heat.
- In another pan, heat remaining oil and brown the ground beef without over-stirring, seasoning with remaining salt.
- Add mushrooms to the beef pan, sauté until lightly browned, then combine beef and mushrooms with the tomato mixture.
- In the casserole dish, mix cooked noodles with the beef mixture, corn, olives, and two-thirds of the cheese.
- Sprinkle remaining cheese evenly on top and bake uncovered for 30 minutes until bubbly and golden.
