Candied Yams Recipe

Ingredients
For the yams
- 3 tablespoons kosher salt
- 2 quarts cold water
- 3 pounds orange-fleshed sweet potatoes, peeled and cut into 2-inch pieces
For the glaze
- 1 cup brown sugar
- 4 tablespoons unsalted butter
- ½ cup freshly squeezed lemon juice
- ¼ cup maple syrup
- ½ teaspoon ground ginger
- ¼ teaspoon ground cinnamon
- 1 pinch cayenne pepper
- Salt to taste

Directions
- Prepare the sweet potatoes
In a large pot, dissolve the kosher salt in cold water. Add the sweet potato pieces and bring to a gentle simmer over medium-high heat. Reduce to medium-low and cook for 5 to 7 minutes, until the potatoes are partially tender but still firm. They should be pierced easily without falling apart. Drain and set aside. - Make the glaze
In a wide skillet, combine the brown sugar, butter, lemon juice, maple syrup, ginger, cinnamon, cayenne pepper, and a small pinch of salt. Cook over medium-high heat, stirring continuously as the butter melts and the mixture begins to bubble.
