Ingredients

  • 1 ½ cups creamy peanut butter
  • 1 cup unsalted butter, softened
  • ½ teaspoon vanilla extract
  • 4 cups sifted powdered sugar, plus extra if needed
  • 4 cups semisweet chocolate chips
  • Toothpicks
  • Wax paper to line baking sheets

Directions

  • In a large mixing bowl, beat the peanut butter, softened butter, and vanilla extract together until light and fluffy.
  • Gradually incorporate the sifted powdered sugar, mixing until the mixture is firm and smooth. Add more sugar if necessary so the dough can hold its shape.
  • Shape the dough into small 1-inch balls and arrange them on a baking sheet lined with wax paper.
  • Insert a toothpick into the top of each peanut butter ball, then place the tray in the freezer for about 30 minutes until the balls are firm.
  • Melt the chocolate chips in a double boiler or heatproof bowl over gently simmering water, stirring until fully smooth.
  • Holding each peanut butter ball by the toothpick, dip it into the melted chocolate, leaving a small circle of peanut butter visible on the top.
  • Set the chocolate-coated buckeyes back onto the lined baking sheet and carefully remove the toothpicks.
  • Chill in the refrigerator until the chocolate has hardened and the buckeyes are ready to enjoy.
