Ingredients
- 1 ½ cups creamy peanut butter
- 1 cup unsalted butter, softened
- ½ teaspoon vanilla extract
- 4 cups sifted powdered sugar, plus extra if needed
- 4 cups semisweet chocolate chips
- Toothpicks
- Wax paper to line baking sheets
Directions
- In a large mixing bowl, beat the peanut butter, softened butter, and vanilla extract together until light and fluffy.
- Gradually incorporate the sifted powdered sugar, mixing until the mixture is firm and smooth. Add more sugar if necessary so the dough can hold its shape.
- Shape the dough into small 1-inch balls and arrange them on a baking sheet lined with wax paper.
- Insert a toothpick into the top of each peanut butter ball, then place the tray in the freezer for about 30 minutes until the balls are firm.
- Melt the chocolate chips in a double boiler or heatproof bowl over gently simmering water, stirring until fully smooth.
- Holding each peanut butter ball by the toothpick, dip it into the melted chocolate, leaving a small circle of peanut butter visible on the top.
- Set the chocolate-coated buckeyes back onto the lined baking sheet and carefully remove the toothpicks.
- Chill in the refrigerator until the chocolate has hardened and the buckeyes are ready to enjoy.
