Ingredients
- 1 loaf French bread or Italian bread, sliced ¼-inch thick
- 1 tablespoon extra-virgin olive oil (for brushing)
- 8 Roma (plum) tomatoes, diced
- ⅓ cup fresh basil, finely chopped
- 2 cloves garlic, minced
- 1 ounce freshly grated Parmesan cheese
- 1 tablespoon balsamic vinegar
- 2 teaspoons olive oil
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper
Directions
- Preheat the oven to 400°F (200°C). Arrange the bread slices on a baking sheet.
- Brush both sides of each slice lightly with olive oil. Toast in the oven for 5–10 minutes, flipping halfway through, until golden brown.
- In a mixing bowl, combine diced tomatoes, chopped basil, minced garlic, and Parmesan cheese.
- Add balsamic vinegar, olive oil, salt, and black pepper. Mix gently until well combined.
- Spoon the tomato mixture onto each toasted bread slice.
